-200聽G聽of egg white
-200聽G聽of white sugar
-100 G聽almond flour
-100 G聽of icing sugar
-Different聽colors聽of dye (yellow and red, green …)
In a聽metal聽bowl聽set聽on fire聽the egg whites聽until stiff聽with the聽white sugar so it iscompletely dissolved.聽Remove from heat聽and beat until聽whites are聽stiff peaks.聽Sift together the聽almond flour聽with聽icing sugar and聽add to聽mixture.聽Preparation聽divided into two equal parts.聽A聽part in a聽one聽color聽dyes.聽Add the聽other dye聽to the other side聽of the preparation.聽We put 聽the聽mixture in a聽smooth聽sleeve with聽a mouthpiece聽and聽a plaque that聽we will have covered聽with聽greaseproof paper,聽we draw聽circles with聽the dough.聽We leave聽to air dry for聽2 hours or聽until it forms聽a hard crust聽on the surface.聽Bake聽at about 140 掳聽C聽for about 15-20聽minutes.聽We took it out the oven and聽let cool.聽As聽they are cool,聽fill聽with聽the聽cream聽you want.

-Zest聽of 1 lemon
Preparation:In a saucepan聽put the聽butter,聽white sugar聽and聽lemon juice.In addition, beat聽the egg聽yolks with聽the聽icing sugar,聽starch and聽lemon zest.聽Add聽this mixture聽to the preparation聽of butter聽and put it聽over low heat until thickened.Remove from heat and聽let cool聽air聽first, and then in聽the refrigerator,聽until thickened.As聽it is cold, we had聽a聽smooth-tipped聽pastry bag聽and we can聽fill the聽macarons.
